Pork and Apple Burger

If you’re looking at taking your BBQ game up a notch this year then give this burger recipe a go.

I originally got the recipe from James Martin, from his Highlands and Islands book (and the TV show). Simply made a couple of changes to suit my calories and taste etc.

Ingredients for 1 Burger

  • 150g of Pork Mince
  • Salt and Pepper
  • 1x Brioche Bun

Ingredients for the Slaw (will make 4 burgers)

  • 2x Red Onion
  • 1x Celery Stick
  • 1-2 tablespoon of light mayo (depending on how dry you like it)
  • Salt and Pepper
  • Lemon Juice

Ingredients for the Apple Sauce (will make 4 burgers)

  • 3x Apples
  • 2x tsp of Honey
  • 1x tsp of Paprika
  • 1x tsp of Cayenne Pepper

Method

  • Season and mould your Pork into patties and slightly press them down so they are flat. Refrigerate them until you are ready to cook.
  • Grate the Apple into bowl and mix with the spices.
  • Preheat a saucepan on a medium heat and soften your apples until they are cooked and the juices start to disappear.
  • Once they are cooked, add the honey and stir.
  • Leave to one side for later.
  • At this stage, prep your slaw for the top of your burger making sure you add in the mayonnaise a small amount at a time, until you get the desired consistency.

The Burger

  • Preheat your BBQ or frying pan ready for the burgers.
  • Cook your burgers evenly on each side, turning only once until they have reached 75 degrees C.

Coat the bottom of the bun with the apple sauce, place the burger on top and top with the slaw.
