
The nation’s favourite… Fish and Chips!
Personally one of my favourites and especially when I’m in the mood for some comfort food.
This meal ticks all the boxes for me… packed of nutrients, full of flavour and easy to make!
Does is taste better than the chip shop classic?
Obviously not, it’s like comparing apples and oranges.
Does it pack some flavour with more than half the calories and grease?
Absolutely!

Ingredients (Serves 2)
- 2x Cod Loins
- 30g of Paxo Breadcrumbs
- 1x Egg
- 400g of Potatoes
- Salt and Pepper
- 1x Tin of Mushy Peas
- 1tsp of Paprika
- 1tsp of Garlic Granules
Method
- Preheat the oven to 230 degrees Celsius ready for the chips.
- Cut the potatoes into chips and spray a baking tray with some light oil.
- Put the chips on the tray, top with salt and spray again with some light oil.
- Put the chips in for 20 mins, making sure you don’t open the oven for the duration.
- Whilst the chips are in the oven, prep your fish. Take it out of the packet and pat dry with some kitchen roll.
- Mix together the breadcrumbs with the paprika, garlic, salt and pepper in a bowl. In another bowl, beat and egg.
- Dip the fish into the egg on both sides. Then coat the fish with the crumbs and herbs mix.
- Put the fish on a foiled baking tray.
- After the 20 mins, flip the chips and turn the oven down to 180 degrees Celsius.
- Put the fish in the oven for around 15 minutes or until it reaches 63-65 degrees Celsius.
- Whilst the fish is cooking, get the peas on the hob and cook as per the instructions.
There we have it. Easy as that. Not the most technical recipe, but it’s one of my go to meals that never disappoints.
