Spicy Chicken Kebabs with Halloumi

If you’re on the BBQ this summer then you need to try these spicy chicken kebabs (with added Halloumi Cheese).

Kebabs are great as they can be made with various meats, plenty of vegetables and pack them with flavour!

Give the recipe a go:

Ingredients (makes 4 kebabs ~350 cals per kebab)

  • 600g of Chicken
  • Standard block of Halloumi (200g)
  • Courgette
  • Red Onion
  • Red Pepper
  • 100g Greek Yoghurt
  • 1 tsp of Paprika
  • 1 tsp of Chilli Powder
  • 1 tsp Garlic Powder
  • Juice of a Lime

Method

  • Chop the chicken into large chunks, suitable for the kebab skewers.
  • Coat the chicken in the Greek yoghurt and all the spices, herbs and lime juice.
  • Leave to marinade for as long as possible, but minimum 20-30 minutes.
  • Chop the halloumi, courgette, peppers and onions into large chunks and start to assemble your kebabs.
  • Personally I like to assemble them with the vegetables, chicken halloumi then repeat.
  • Heat up your BBQ/Grill/Pan and cook them for 5-7 minutes each side, ensuring you rotate them evenly and they are cooked through (75 degrees C).
  • Enjoy with some sweet chilli sauce.
