The sharpness of the lime really mixes with the sweetness of the mango. They go perfect together.
For this, you will need some simple ingredients, have a look below:
Ingredients (Serves 2)
For the Cod:
- 2 x Regular sized Cod Loins.
- Juice and the zest of one Lime.
For the Salsa:
- 1x Mango
- 1/4 of a Cucumber.
- 8-10x Cherry Tomatoes.
- 2-3x Spring Onions.
- 1x Medium Avocado.
- Juice and the zest of one Lime.
- 200g Jersey Royal Potatoes (Optional).
Method
This is one of the easiest recipes to make. Especially one that bangs such a punch of flavour. The sharpness of the lime really mixes with the mango. They go perfect together. You won’t be disappointed.
- If you are going for the optional potato option, chop them and her them on the boil as they will take the longest.
- Preheat the oven to 200 degrees Celsius.
- Place the Cod on a baking tray and top with salt, pepper and the juice/zest of a lime.
- Put in the oven for 10-12 minutes.
- Whilst that is in the oven, mix all of the Salsa ingredients, taking care when you peel and slice the mango.
- Slice the Avocado last to avoid it from going brown.
- Top with the juice of another lime and serve with the Cod when ready.
- If you are making the potatoes, top with a little butter and chopped Parsley.
